If your kids are anything like mine, getting them to eat their veggies isn't a very easy task. But what kid doesn't like chocolate?
I've really enjoyed experimenting with different loaf recipes over the years, but this one takes the cake! (Not too sure if that qualifies as a pun)
My picky toddler is a super fan of my Chocolate Zucchini Bread, my husband raves about it, and I'm now ready to share it with you, too!

Chocolate Zucchini Bread
Bake Time: 45 minutes
Total Time: 1 hour
Ingredients
1 1/2 cups grated zucchini
1 1/4 cups flour
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
1/2 cup butter (melted)
2 large eggs
2 tsp vanilla extract
3/4 cup brown sugar
1 cup semi-sweet chocolate chips
Baking Tools and Utensils
8 1/2" by 4 1/2" loaf pan (I prefer using a dark pan)
Medium sized bowl
Large sized bowl
Whisk
Mixing spoon
Knife
Grater
Directions
Preheat oven to 350˚
Grate zucchini. You do not need to peel the zucchini beforehand, simply cut off the ends with a knife and grate.
Gently blot grated zucchini with a paper towel (or tea towel) to remove excess water.
Grease your loaf pan
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. This will be your flour mixture.
In a large bowl, whisk together the melted butter, eggs, vanilla extract, and brown sugar until there are no more chunks. This will be your oil mixture.
Gently fold the flour mixture into the oil mixture.
Once the mixtures are combined, stir in the grated zucchini.
Fold in chocolate chips.
Pour batter into greased pan and bake for 45 minutes.
Notes: Wrap tightly and freeze for up to 2 months!
